Turkey Gumbo

Ingredients
- 1 turkey carcass
- 4 cups leftover turkey meat
- 1 cup oil
- 1 cup flour
- 1 onion, chopped
- 6 green onions, sliced
- 1 bell pepper, chopped
- 4 small celery stalks, sliced
- 4 TBSP parsley, chopped
- 2 garlic cloves, chopped
- salt
- pepper
- 3 bay leaves
- 1 TBSP thyme
- 1/8 tsp cayenne
- 1 10 oz pkg okra, frozen slices
- additional chicken broth, if needed

Pick turkey off the bones and put in large pot

Your choice: you can boil the carcass to be sure to get all the meat off, or you can just debone the turkey.

Make a roux on the stove by heating the oil
- and add flour until well blended.

Continue cooking until roux is a dark brown,
- the darker the better…but don’t burn.

Add roux to large pot.

Add vegetables, stir and cook for about 10
- minutes or until veggies are tender.

Add the turkey and cook for 5 more minutes.

Add broth with the seasonings.

Bring to a boil.Reduce heat and simmer 1-2 hours.
