Cousin Theda’s Rabbit Jambalyaya

Ingredients
- 1 rabbit
- 2 cans tomato sauce
- 1 can Rotel tomatoes
- Flour
- Oil
- 1 onion, large and chopped
- Salt
- Pepper
- Garlic
- Rice
Directions

Brown the rabbit with seasonings.

Salt and Pepper to taste.

Pinch of garlic powder

Prepare roux by heating the oil and adding
- flour to the oil. Cook until fairly thick and
- brown; the darker the better, without
- burning it.

Add roux to the rabbit.

Fill the pot halfway with water.

Add the onion.

Simmer around one (1) hour. Add tomato
- sauce and tomatoes.

Serve over rice
