Cousin Theda’s Rabbit Jambalyaya

Serves 8 people

Ingredients

  • 1 rabbit
  • 2 cans tomato sauce
  • 1 can Rotel tomatoes
  • Flour
  • Oil
  • 1 onion, large and chopped
  • Salt
  • Pepper
  • Garlic
  • Rice

Directions

  1. Brown the rabbit with seasonings.

  2. Salt and Pepper to taste.

  3. Pinch of garlic powder

  4. Prepare roux by heating the oil and adding

  5. flour to the oil. Cook until fairly thick and
  6. brown; the darker the better, without
  7. burning it.
  8. Add roux to the rabbit.

  9. Fill the pot halfway with water.

  10. Add the onion.

  11. Simmer around one (1) hour. Add tomato

  12. sauce and tomatoes.
  13. Serve over rice
