Ingredients
- 5 cups Cornflakes cereal
- 1 cup sweetened flake coconut
- 4 1/2 cups miniature marshmallows
- 1/2 cup chopped, lightly salted macadamia nuts
- 1/2 cup (1 stick) butter
- 1 1/2 tsp rum flavored extract
- 2 tsp ground ginger

Line cookie sheet with wax paper.

In a large bowl, mix the Cornflakes, coconut and macadamia nuts.

In a large saucepan, set over low heat, melt the butter. Add marshmallows; stir until marshmallows are melted and mixture is smooth. Remove from heat and stir in ginger and rum extract. Pour over Cornflakes mixture; toss until well coated.

Quickly drop tablespoonfuls on wax paper. Cool completely. Store tightly covered between layers of wax paper.
