Grilled Chicken and Pineapple Quesadillas

Ingredients
- 8 Flour Tortillas
- 3 cups Monteray Jack Cheese
- 2 cups grilled Pineapple
- Cilantro
- 3 whole boneless skinless Chicken Breasts
- 3 tblsp BBQ Sauce
- salt and pepper to taste
- butter
Directions

Hack off the top and the bottom of the pineapple and then down the middle. Then cut them into four wedges(long ways) and then cut those four in half (long ways) then cut the triangular core off of each wedge.

Next cut off the hard, prickly skin. Sticka skewer throug the pineapple, lengthwise and grill till done.

Remove from skewer and cut into thin chunks.

beat chicken breast down with mallet till flat.

Place on plate and sprinkle with salt and pepper (add whatever spices you like here)

Grill the chicken till done (add a little BBQ sauce if you like)

Cut chicken into thin slices when done and set aside.

Brown the tortillas in some butter until golden brown.

Chop up whatever else you wanna add, jalapeno, tomatoes, onions, etc.

Assemble: Lay tortilla flat and sprinkle with cheese. Next place chicken strips on top.

Next add slices of pineapple and jalepenos or whatever other ingredients you chose.

Drizzle on a little more BBQ sauce ontop

When all assembled place on griddle, place top layer tortilla on top and grill until cheese is melted.

Cut into 6 wedges
