Raspberry Swirl Cheesecake

Ingredients

  • 1 1/2 cups fresh or thawed lightly sweetened red raspberries
  • 1 14 oz can sweetened condensed milk (not evaporated)
  • 2 8 oz pkgs cream cheese, softened
  • 3 eggs
  • 2 6 oz purchased chocolate flavored pie crusts

Directions

  1. Preheat oven to 350 degrees. In blender, mix 1 1/2 cups raspberries until smooth. Press through sieve to remove seeds. Stir in 1/3 cup of milk into sieved raspberries. Set aside.

  2. Mix cream cheese, eggs and remaining milk until smooth. Spoon into pie crust. Drizzle with raspberry mixture, with knife. Gently swirl mixture through cream cheese. Bake 25 mins or until center is nearly set when shaken. Cool. Cover and chill for 4 hours.
