Ingredients
- 2 eggs
- 1 cup Santa Fe frozen mixed veggies (black beans, peppers, corn)
- 1 flour tortilla
- 1/2 cup low-fat shredded cheddar cheese
- 1/4 cup salsa
Directions

1) Mix the eggs and veggies and spread the mixture on a plate coated with non-stick spray. Cook in the microwave for 1 minute, stir with a fork and microwave again; until the eggs are cooked and the veggies are warm.

2) Pile onto a tortilla and top with cheese and salsa. Fold and eat!
