Black Jack Quesadillas

Ingredients

  • 1-16 oz. can black beans, rinsed and drained
  • 1-4 oz. jar chopped mild green chiles, drained
  • 1/2 cup salsa
  • 1 teaspoon dried oregano
  • 4-8" low-fat flour tortillas
  • 1-8 oz. package shredded reduced-fat cheddar or monterey jack cheese

Directions

  1. 1) Place the beans into a bowl and mash. Stir in chiles, salsa, and oregano.

  2. 2) Put a tortilla in a dry skillet over medium heat.

  3. 3) Top with 1/4 of the cheese. Spread on 1/2 of the bean mixture. Top with another 1/4 of the cheese and another tortilla.

  4. 4) Squash the sandwich, then cook 3 to 4 minutes per side, or until golden. Cut into 4 wedges and serve.
