Lamb Chops with Chimichurri sauce

Ingredients

  • 8 3 oz lamb chops 3/4" thick
  • 1/4 c olive oil, divided
  • 1/3 c fresh parsley leaves
  • 2 peeled garlic cloves
  • 1 T fresh lemon juice
  • 1/2 t dried oregano
  • 1/4 t red pepper flakes
  • salt and pepper

Directions

  1. Heat grill pan to high.

  2. Rub chops with oil, salt and pepper and grill 3 min per side.

  3. Remove from heat, cover loosely with foil.

  4. Combine remaining ingredients and oil in food processor. Pulse to combine.

  5. Serve with lamb.
