Ingredients
- 1 cup green pepper strips
- 2/3 cup bias cut celery
- 2 Tbsp Crisco
- 2 large or 4 small tenderized pork cutlets cut in 1/4 inch strips
- 2/3 cup cold water
- 2 Tbsp soy sauce
- 4 tsp cornstarch
- 1 tsp sugar
- 1/2 tsp salt
- 2 medium tomatoes, peeled and cut in wedges
- 2 cups hot cooked rice
- 1/2 tsp ginger
Directions

In heavy skillet, quickly cook green pepper and celery in hot Crisco until crisp-tender. Remove and set aside.

Add meat to hot skillet; brown quickly. Combine water, soy sauce, cornstarch, sugar, and salt; add to skillet.

Cook and stir until mixture thickens and bubbles.

Add celery, green pepper, and tomatoes; heat through.

Serve over ginger rice; toss hot rice with ginger.

Serve extra soy sauce if desired.
