Ingredients
- 4 center cut tenderloin medallions
- salt, coarse pepper
- 1/4 c plus 1 T trans free margarine
- 1/4 c finely chopped shallots
- 1/4 c mushroom caps, sliced 1/8" thick
- 1/8 t minced garlic
- 1 t mustard powder
- 1 T worcestershire
- 2 T lemon juice
- 2 T chopped parsley
- 1 T chives
Directions

Pound steak to 1/2" thickness, pat dry, and sprinkle with salt and pepper.

Melt 3 T margarine over med high heat and cook each steak for 2 min each side.

Remove to a plate.

Melt remaining margarine, add everything through garlic and cook 1 min.

Add mustard and worcestershire and mix.

Return steaks to pan and cook til done.

Remove steaks.

Add lemon juice, parsley, chives to pan, mix well, and pour over steaks.
