Steak Diane

Ingredients

  • 4 center cut tenderloin medallions
  • salt, coarse pepper
  • 1/4 c plus 1 T trans free margarine
  • 1/4 c finely chopped shallots
  • 1/4 c mushroom caps, sliced 1/8" thick
  • 1/8 t minced garlic
  • 1 t mustard powder
  • 1 T worcestershire
  • 2 T lemon juice
  • 2 T chopped parsley
  • 1 T chives

Directions

  1. Pound steak to 1/2" thickness, pat dry, and sprinkle with salt and pepper.

  2. Melt 3 T margarine over med high heat and cook each steak for 2 min each side.

  3. Remove to a plate.

  4. Melt remaining margarine, add everything through garlic and cook 1 min.

  5. Add mustard and worcestershire and mix.

  6. Return steaks to pan and cook til done.

  7. Remove steaks.

  8. Add lemon juice, parsley, chives to pan, mix well, and pour over steaks.
