Sweet Potato, Bacon, and Egg Salad

Ingredients

  • 2/3 cup diced sweet potato
  • 2 eggs
  • 2 rashes of bacon, diced using meat only
  • 1 tablespoon of oil
  • 4 tablespoons dill, finely chopped
  • 2 tablespoons mayonaise
  • 2 tablespoons lemon juice

Directions

  1. Boil eggs in water until cooked. Peel and dice.

  2. Boil sweet potato for 4 to 5 minutes.

  3. Heat over skillet medium-high. Add olive oil and bacon, and cook until slightly crunchy.

  4. In a small bowl, mix dill, mayo, and lemon juice.

  5. Place eggs, sweet potato, bacon, and mayo sauce into medium size serving bowl and combine well.
