Ingredients

  • Olive oil
  • 2 medium eggplants coarsely cubed
  • 2 coarsely chopped potatoes
  • 2 zucchinis coarsely cubed
  • 2 green peppers coarsely cubed
  • 2 medium onions coarsely cubed
  • 1 or 2 large ripe cubed tomatoes
  • Salt
  • Oregano

Directions

  1. In medium to deep frying pan put enough olive oil to cover pan. Add vegetables and a little salt. Cook covered on a very low fire. Approximately 20 minutes cooking time. When done sprinkle a little oregano and raw olive oil.
