Ingredients
- 2 tomatoes, chopped
- 2 large red bell peppers, chopped
- 1/4 cup sun-dried tomatoes, packed tightly
- 1/4 cup fresh cilantro, packed
- 2 large celery stalks, chopped
- 1/4 jalapeƱo pepper, chopped
- 3/4 cup water
- 1 tablespoon fresh lime juice
- 1 teaspoon salt
- 3/4 teaspoon cumin
- 1/2 teaspoon coriander
- 1/2 teaspoon chili powder
- 1/4 teaspoon paprika
- 1 clove garlic
- 1/4 cup onion, chopped
- 1/8 teaspoon cayenne pepper
- 2 tablespoons olive oil

In a blender, combine all ingredients except olive oil. Once well combined, drizzle in olive oil while blending until smooth. Serve with fresh veggies or warm pita strips.
