Ingredients
- 1/4 cup butter
- 1/4 cup plain yogurt
- 1-1/2 cups sugar
- 1/2 Tbsp. vanilla
- 2 eggs
- 3/4 cup all-purpose flour
- 1/4 tsp. baking soda
- 1/2 cup cocoa powder
- 1/2 tsp. salt
- 1/3 cup bittersweet chocolate chips
- 4 Oreo cookies
- For decorating:
- 1/2 cup orange colored chocolate
- 5-6 green colored chocolate wafers
- 1/2 cup bittersweet chocolate chips
Directions
-
Preheat oven to 350°F.
-
Combine all ingredients except for chocolate chips and Oreos; mix well.
-
Mix through, then fold in the chocolate chips.
-
Pour batter into a 9×9 baking pan. Put one Oreo into each corner, but not too close to the edge. (When you use the cookie cutter, they will be in the center.)
-
Then cover the Oreos with the brownie batter.
-
Bake for about 35 minutes or until toothpick inserted comes out with minimal crumbs.
-
When it comes out of the oven, I like to smash it down/press it down (use a spatula). I like to think this makes a moist brownie.
-
Let cool, then cut into pumpkin shapes.
-
Decorating with different colored chocolates:
-
Melt 1/2 cup of orange chocolate and spread over the brownies. Use an offset spatula to make wavy, vertical “pumpkin” lines.
-
Melt 5-6 green wafers and use them as pumpkin stems. Cute!
-
Melt about 1/2 cup of bittersweet chocolate for pumpkin faces; place the melted chocolate into a piping bag; use a tip if you like.
