Bay Roasted New Potatoes

Ingredients

  • 2 pounds new potatoes (such as fingerlings; less than 3" diameter), halved
  • 1/4 cup olive oil
  • 6 dried bay leaves
  • 1 1/4 teaspoon salt
  • 1 teaspoon paprika
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of cayenne pepper
  • 2 tablespoons butter

Directions

  1. at oven to 425.

  2. Put potatoes, oil, bay leaves, salt, paprika, black pepper, and cayenne in a medium bowl. Toss thoroughly to combine.

  3. Spread potatoes on rimmed baking sheet. Set bowl aside. Put baking sheet in oven and roast potatoes until tender, 30 to 40 minutes, stirring and turning them halfway through cooking.

  4. Return potatoes to bowl and toss with butter. Season with salt and freshly ground black pepper to taste.
