Smoked Cheese & Sausage Lasagna

Ingredients
- 3 tbs olive oil, divided
- 1 pound Italian sausages, casings removed
- 2 oz sliced prosciutto, chopped (or bacon)
- 2 cups chopped onion
- 1 stalk celery, chopped
- 3 garlic cloves, chopped
- 1 tsp dried oregano
- 1/4 tsp dried crushed red pepper
- 2 tbs tomato paste
- 1 28oz can chopped tomatoes
- 1 tbs fresh basil, chopped
- 12 lasagna noodles
- 1 15oz package of ricotta cheese
- 2 cups smoked mozzarella cheese
- 1 large egg
Directions

For the sauce, brown sausage, breaking up with fork

Add prosciutto, onions, celery, garlic cloves and dried oregano

Stir in tomato paste

Add tomatoes (including juice) and basil

Simmer until sauce thickens (about 15 mins)

Season with salt and pepper (can be made ahead and refrigerated)

For lasagna, cook noodles

Mix ricotta and 1 1/2 cups of smoked mozzarella

Season with salt and pepper; mix in egg

Brush 9×13 pan with olive oil

Spread 1 cup tomato sauce evenly on bottom

Arrange 3 noodles atop sauce

Spread 3/4 cheese mixture over noodles

Spoon 1 1/2 cup cause over top

Repeat with noodles, cheese mix and sauce two more times

Sprinkle on 1/2 cup remaining mozzarella

Cover with foil
-
Bake at 350 degrees for 40 mins

Uncover and bake approximately 15 mins more

Let stand 10 mins and serve
