Grilled Chicken and Bacon Mac n Cheese

Ingredients

  • 6 slices bacon, cooked and chopped
  • 1 lb pasta, cooked
  • 2 boneless, skinless chicken breasts
  • 1/2 tsp paprika
  • 4 TBSP butter
  • 1 onion sliced
  • 2 TBSP flour
  • 1/2 cup apple cider or chicken stock
  • 2 cups milk
  • 2 tbsp thyme
  • 1 tsp ground nutmeg
  • 1 1/2 cups shredded cheese

Directions

  1. Season chicken with paprika, salt and pepper. Grill chicken for 10 min, slice the chicken.

  2. While chicken cooking, melt butter, add onion and cook until tender. Add in flour and stir for 1 min. Whisk in cider or stock, then milk. Bring to a boil and whisk until it coats the back of a spoon. (3-4 min). Add thyme, season with salt, pepper and nutmeg. Stir in cheese until melted. Add chicken, bacon and sauce to pasta and transfer to casserole dish. Broil until browned (5 min).
