Brown sugar Shortbread

Ingredients
- 1Cup soft, butter
- 3/4Cup packed brown sugar
- 2t. vanilla
- 2Cup flour
- 1/2t. salt.

Blend with mixer- sugar and butter until smooth.Scrape down sides of bowl.

Add vanilla and slowly add in flour. Mix until just blended.

Butter must be soft and warm to get desired consistency…or dough may need worked with warm hands.

(purple scoop or smaller) Make balls about the size of a (2-bite) meatball.

Roll and hand form to look like “peanut butter eggs”. Bake approximately 7 minutes. @ 350* or until lightly golden.

Let cool on tray a little before moving to wire rack.

When completely cooled dip 1/2 of cookie into chocolate ganache and TOASTED pecan pieces. Air dry before packing.

Ganache

1/2 cup. soy milk
- chocolate chips (1Cup?) Add and melt chocolate slowly to get desired consistency-smooth,but not runny.

1-2T. Brandy (flavored okay)

Pecans

Toast chopped pecans in a little BUTTER (unsalted 1T.) over medium heat. Watch closely and toss in pan until lightly browned. (you can smell the difference)
