Fernette’s Date Nut Pudding

Ingredients

  • 2 c. boiling water
  • 2 c. brown sugar
  • 1 3/4 c. flour
  • 1 c. sugar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup milk
  • 1 tsp vanilla
  • 1 c. dates (chopped)
  • 1 c. nuts (pecans)

Directions

  1. Mix 2 c. boiling water and 2 c. brown sugar in 9×13″ glass pan. Stir and dissolve.

  2. In small bowl combine 1 3/4 c. flour, 1 c. sugar, 1 tsp baking soda, 1/4 tsp salt. Stir together.

  3. Add 1 cup milk, 1 tsp vanilla, 1 c. dates (chopped), 1 c. nuts (pecans) to dry ingredients.

  4. Spoon over brown sugar mixture

  5. Bake at 350* for 30-40 minutes. Test w/ toothpick for doneness.
