Ingredients
- 4 cups chopped, peeled fresh tomatoes
- 2 cups chopped green peppers
- 2 cups chopped sweet red peppers
- 4 cups chopped onions
- 1 cup chopped jalapeno peppers
- 1 cup white vinegar
- 2 cloves garlic, minced
- 1 TBSP sugar
- 1/4 cup canning salt
- 2 tsp cumin
- 1 tsp ALUM
- 1 tsp Paprika
- 1 tsp dried oregano or cilantro
- 1 cup - 8 oz tomato paste

Bring all but paste to a boil. Reduce heat and simmer until thick (about an hour). Stir in tomato paste. Simmer another 5-10 min. pour into jars. Hot water bath for 30 min or pressure cooker to 10 lbs pressure and shut off.
