Joanies Salsa

Ingredients

  • 4 cups chopped, peeled fresh tomatoes
  • 2 cups chopped green peppers
  • 2 cups chopped sweet red peppers
  • 4 cups chopped onions
  • 1 cup chopped jalapeno peppers
  • 1 cup white vinegar
  • 2 cloves garlic, minced
  • 1 TBSP sugar
  • 1/4 cup canning salt
  • 2 tsp cumin
  • 1 tsp ALUM
  • 1 tsp Paprika
  • 1 tsp dried oregano or cilantro
  • 1 cup - 8 oz tomato paste

Directions

  1. Bring all but paste to a boil. Reduce heat and simmer until thick (about an hour). Stir in tomato paste. Simmer another 5-10 min. pour into jars. Hot water bath for 30 min or pressure cooker to 10 lbs pressure and shut off.
