Ingredients
- 1/2 lb of asparagus trimmed and cut into 2 inch pieces
- 2 1/2 Cups of chicken broth (keep an extra 1/2 cup on hand)
- 3 Tbsp of finely chopped onions
- 1 Tbsp and 1 Tsp of olive oil
- 1 Cup of Arborio rice
- 1/3 Cup of white wine
- 1 Tsp of butter
- 1 Tbsp and 1 Tsp of grated parmesan cheese
- Salt
- Pepper
Directions

Place asparagus in large sauce pan. Add ½ inches of water and bring to a boil. Reduce heat and then simmer for 3 minutes until tender. Then set asparagus aside.

In a large saucepan bring the broth to a boil then reduce heat and cover and maintain at a simmer.

In a heavy bottom skillet cook onion in oil over medium heat until tender.

Add rice to onions and stir well. Cook for 3 minutes.

Add wine to rice and cook until it is absorbed.

Stir in a 1/2 cup of simmering broth.

Continue to add broth slowly in this manner until there is about ¼ cup of broth left. This should take about 20 minutes.

Add asparagus and heat through.

Remove from heat and add butter, salt, pepper, and the parmesan cheese.

Serve immediately.
