Crispy Edamame

Prep time is eliminated if shelled soybeans are bought. Salt it unnecessary in this recipe.

Cook time: 15 minutes
Serves 1 people

Ingredients

  • 1 12 oz package of edamame/green soybeans
  • 1 tbsp of olive oil
  • 1/4 cup of grated parmesan cheese
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400°C

  2. Shell edamame.

  3. Put edamame in a colander and rinse under cold water.

  4. Line a 9 × 13 baking dish with tin foil.

  5. Spread edamame onto baking dish.

  6. Drizzle with olive oil and sprinkle parmesan cheese over the top.

  7. Season lightly with salt and pepper.

  8. Bake in the oven for 15 minutes, stirring the edamame halfway through.

  9. Serve.
