Pumpkin Bread

Ingredients

  • 1 cup brown sugar
  • 2 large egg whites
  • 1 can pure pumpkin
  • 1/2 cup canola oil
  • 1/2 cup plain yogurt
  • 1 tsp vanilla
  • 1 cup flour
  • 3/4 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Directions

  1. at oven to 350. Grease loaf pan,

  2. Whisk brown sugar and egg whites. Add pumpkin, oil, yogurt and vanilla.

  3. In a separate bowl, combine flours, baking powder, cinnamon, nutmg, baking soda and salt. Add to pumpkin mixture. stir until just combined.

  4. Bake 45-50 min. Cool in pan 10 min then wire rack.
