Roasted Broccoli & Chicken Bake

Serves 4 people
Ingredients
- 1 cup pearl barley
- 3 cups chicken broth
- 2 TBSP olive oil
- 1 lb boneless skinless chicken breast halves, cut
- salt and pepper
- 1 large carrot, finely chopped
- 1 small onion, finely chopped
- 2 tsp thyme
- 2 garlic cloves
- 8 oz mushrooms
- 1/4 cup water
- 6 cups broccoli florets

heat oven to 400

In microwaveable bowl, mix barley and broth. Cover and microwave on high 20-25 min

In a skillet, sprinkle chicken with salt and pepper and cook in 1 tbsp oil 4 min. Transfer chicken to a bowl.

In skillet, add carrot, onion and thyme. Cook 3 min, add garlic, cook 30 seconds and add mushrooms and water. Cook 2 min. Remove from heat, stir in chicken and barley.

Put in a baking dish. Toss broccoli wit salt and oil and arrange on top of barley mixture. Bake 20-25 min.
