Ingredients
- 4 medium zucchini
- 1 lb ground beef
- 1/2 cup chopped onion
- 1 egg, beaten
- 3/4 cup spaghetti sauce
- 1/4 cup bread crumbs
- 1/4 tsp salt and pepper, each
- 1 cup cheese, divided
Directions

cut zucchini in half, lengthwise. at bottom, cut thin strip to lay flat. scoop out pulp.

place shells in ungreased 3 qt microwavable dish. cover and cook on high 3 min then drain.

cook beef and onion. remove from heat, stir in egg, sauce, bread crumbs, salt, pepper and 1/2 the cheese.

spoon 1/4 mixture into each shell. microwave uncovered 4 min. sprinkle with cheese. microwave 3-4 more min.
