Ingredients
- 3 cucumbers, peeled, seeded, chopped
- 1 scallion, sliced
- 1 garlic clove, chopped
- 3 T fresh mint leaves
- 1/2 c water
- 1 8 oz tin reduced fat sour cream
- 1 T lemon juice
- 1/4 t salt
- 1/4 t pepper
Directions

Puree cucumbers, scallion, garlic, mint leaves, and water til smooth. Add other ingredients.
