Ingredients
- 14 oz. whole grain or whole wheat ziti or penne (1/2 box)
- 1 red bell pepper, seeded and chopped
- 2 carrots, grated
- 2 ribs celery, chopped
- 1/2 pound lean ground turkey
- 1 teaspoon dried oregano
- 1 cup part-skim ricotta cheese
- 1 1/2 cups jarred marinara sauce
- 1 cup grated part-skim mozzarella cheese
Directions

eheat oven to 400. Prepare ziti according to package directions.

Heat a large skillet over high heat. Coat with cooking spray and add bell pepper, carrots, celery, turkey, and oregano. Cook 1 minute without stirring to brown turkey. Cook 3-4 minutes longer, stirring occasionally, breaking up turkey. Turn off heat.

Add pasta and ricotta to turkey mixture and toss to coat. Transfer to a 12″×8″ casserole dish. Pour marinara sauce over pasta mixture and sprinkle with mozzarella. Bake 15 to 20 minutes, or until cheese is bubbly and begins to brown. Rest 5 minutes before serving.
