Potato and Pea Puree

Serves 4 people

Ingredients

  • 1 1/4 cups potato, peeled and chopped
  • 1 cup unsalted vegetable or chicken stock or water
  • 1/2 cup frozen peas

Directions

  1. Cover potato with stock and bring to a boil.

  2. Reduce heat, cover, and simmer for 10 minutes.

  3. Add the peas; cook for 6 minutes longer or until the veggies are tender.

  4. Blend to a puree with a food mill or sieve – do not use a blender for potato.
