Couscous with Ham and Peas

Ingredients

  • 1 cup chicken stock
  • 1/2 cup instant couscous
  • 1 tbsp butter
  • 1/2 small onion, peeled and finely chopped
  • 1/2 cup frozen peas
  • pinch of sugar
  • pinch of salt
  • 3 1/2 tbsp water
  • 1/4 cup diced ham
  • salt and pepper

Directions

  1. Bring the stock to a boil; pour over couscous.

  2. Stir with a fork and set aside for about 6 minutes.

  3. Meanwhile, melt the butter in a saucepan and saute the onion for 2-3 minutes until softened.

  4. Add the peas, sugar, salt and water.

  5. Lower the heat, cover, and cook for 3 minutes more.

  6. Fluff the couscous with a fork, stir in the onion, peas and diced ham.

  7. Season to taste.
