Steak Fajitas

Ingredients

  • 6 oz. flank steak
  • 1 small onion, cut into eighths
  • 1 green OR red pepper, cut into lengthwise-strips
  • 1 small jalapeƱo pepper, cut into rings
  • 1 teaspoon olive oil
  • 1 tablespoon diced cilantro
  • 1/8 teaspoon cinnamon
  • 1/4 teaspoon cumin
  • salt and pepper to taste
  • 4 whole-wheat tortillas
  • salsa

Directions

  1. Cut meat diagonally and across the grain into thin strips. Place in large ziplock bag with onion, peppers, olive oil, and spices; shake well to combine. Let steak marinate in the bag for at least 10 minutes.

  2. Place into a skillet that’s preheated over medium-high heat. Cook for 5-6 minutes or until meat reaches desired doneness, turning frequently. Serve with tortillas and salsa.
