Easy Ice Cream Sandwiches

Ingredients

  • 1/2 cup fat-free plain Greek yogurt
  • 1/2 pint fresh raspberries
  • 1/4 cup raspberry jam
  • 3 tablespoons semisweet chocolate chips, chopped
  • 16 chocolate wafers or thin cookies (2" diameter )

Directions

  1. Place yogurt, raspberries, jam, and chocolate chips in medium bowl. Stir until combined, mashing raspberries with the back of spoon.

  2. Cover and freeze 1 hour, or until mixture begins to firm. Line airtight container with wax paper.

  3. Place half of the wafers in an airtight container. Using small ice cream scoop, top each wafer with 1 scoop of the yogurt mixture. Top with another wafer and cover. Freeze 1 hour longer, or until firm. Serve immediately or store frozen for up to one week.
