Ceviche

Other suggestions:
- Instead of lime juice, can juice fresh lemons and limes in a 50/50 mix
- Can add other types of fish or shellfish (sea scallops, shrimp, etc)
- Can add a touch of extra-virgin olive oil to the dressing

Ingredients
- 1/2 pound sea bass fillet, 1-inch dice
- 3/4 cup lime juice
- 2 cloves garlic, minced
- 1/4 cup diced red onion
- 1/2 cup diced tomatoes
- 1/4 cup peeled and diced cucumber
- 1/4 cup roughly chopped cilantro
- 1/4 teaspoon
Directions

In a non-reactive dish, such as a glass bowl, toss together the sea bass, lime juice, and garlic.

Marinate for 1 hour in the refrigerator. (The lime juice will cook the seafood throughout.)

Once marinated, add remaining ingredients to the sea bass.

Refrigerate 15 minutes.

Serve with tortilla chips.
