Turkey Burgers

Ingredients

  • 3/4 lb ground turkey
  • 1 medium zucchini, grated
  • 1 medium carrot, grated
  • 2 cloves garlic, chopped
  • 1 large egg
  • 1 1/2 teaspoons dried thyme
  • Kosher salt and black pepper
  • 3 Tablespoons Olive Oil
  • Lettuce leaves for cups

Directions

  1. Heat broiler. In a large bowl, combine the turkey, zucchini, carrot, garlic, egg, thyme, 3/4 teaspoons salt, and 1/4 teaspoon pepper. Form the mixture into four 1/2 inch patties. Heat 1 tablespoon of oil in a large skillet over medium heat. Cook the patties until no trace of pink remains, 4-5 minutes per side. Meanwhile, place the bread on a broiler-proof baking sheet and brush with the remaining 2 Tablespoons of oil. Broil until golden and crisp, 1-2 minutes. Place in lettuce cups and enjoy!
