Ingredients
- 1/4 cup pineapple juice
- Tin pan
- Ribs
- 3 cups wood chips, soaked 20 mins.
- 1/4 cup paprika
- 1/4 cup kosher salt
- 1/4 cup brown sugar
- 2 1/2 tbsp granulated garlic
- 2 tbsp granulated onion
- 2 tbsp chili powder
- 1 tbsp coarsely ground black pepper
- 2 tsp ground cumin
- 1/2 tsp cayenne pepper
- 2 tbsp vegetable oil
- 1/2 cup minced onion
- 1/4 cup minced green pepper
- 1/2 jalapeno pepper, seeded and minced
- 1 tbsp minced garlic
- 1 pinch kosher salt
- 1 can (15 oz) tomato sauce
- 1 cup ketchup
- 1/2 cup honey
- 1/2 cup water
- 6 tbsp brown sugar
Directions

Fire up grill and wood chips. Pour 1/8 inch water into tin pan. Remove the grill grate, place the pan next to the coals and replace the grate.

In a bowl, mix rub ingredients. Coat the ribs on both sides with the rub. Place ribs opposite flame over the water. Cover and cook at 250 degrees. Cook for 2 hours.

Make BBQ sauce. Remove ribs from grill and place them on sheet of foil. Add 2 tbsp of pineapple juice to each rack of ribs. Rap them tightly and add back to grill.

Cook ribs another 45 to 60 mins or until meat loosens from the bone. Remove from foil and add rub to ribs.

Cook ribs another 20 mins while lathering BBQ sauce on both sides. Cook until meat tears from bone, and rack bends in the middle when you pick them up with tongs.
