Ingredients
- 4 cups spring OR filtered water
- 2 cups bulger
- Pinch sea salt
- 1 cup finely minced fresh flat-leaf parsley
- 1/4 cup finely minced fresh mint
- 2 ripe tomatoes, diced
- 2-3 scallions, minced
- 1 medium cucumber, diced
- Juice of 2 lemons
- 1/4 cup extra-virgin olive oil
- 1/2 cup minced black olives (optional)
Directions

Bring the water to a boil. Stir in the bulger and salt, cover and turn off the heat. Allow to stand for 15 minutes, undisturbed. Fluff with a fork and transfer to a mixing bowl. Mix in the remaining ingredients, seasoning to taste with salt. Chill before serving.
