Deviled Eggs

Ingredients

  • 4 eggs
  • 1/2 cup cottage cheese
  • 2 tbsp mayo
  • 1 tbsp onion, finely diced
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/8 tsp paprika

Directions

  1. Place cold eggs in a single layer in a saucepan.

  2. Cover eggs with water by at least 1 inch.

  3. Bring to a full boil, then remove pan from heat, cover, and let eggs stand in hot water for 20-25 minutes.

  4. Run cold water over the eggs until they are completely cooled, then peel.

  5. Cut each egg in half, lengthwise.

  6. Remove yolks and transfer to a small bowl.

  7. Mash together with all ingredients other than paprika.

  8. Fill egg whites with mixture, then sprinkle with paprika.

  9. Cover and refrigerate for at least 1 hour prior to serving.
