Cheesy Broccoli Casserole

Can be frozen. This is very good and is just like Stuffed Baked potatoes made with broccoli instead of cauliflower. I cut back on the cream cheese and cheddar because the broccoli florets I bought came in a 14 oz. bag instead of 16 oz. Unlike the cauliflower version, you don’t want to overcook the broccoli so it will hold its shape and not turn to mush. -?

Ingredients

  • 14-16 oz. package frozen broccoli florets
  • 4 oz. cream cheese, softened
  • 4 oz. cheddar cheese, shredded
  • 4 green onions, chopped
  • Salt and pepper to taste
  • 3 pieces bacon, chopped and fried until crisp

Directions

  1. Cook the broccoli 4-5 minutes or just until tender-crisp; drain very well. Put in a greased 2-qt. casserole dish. Mix in the cream cheese, cheddar, green onion, salt, pepper, and bacon. Bake at 350 for 20-30 minutes, until bubbly.
