Southwestern Chicken (aka. Chicken Stuff)

Ingredients
- 2- cans yellow hominy, drained, rinsed
- 2- cans black beans, drained, rinsed
- 16 oz jar chunky salsa, divided
- 6 boneless, skinless chicken breast halves (or equivalent b/s chicken thighs or mix)
- 1 C low-fat shredded cheddar cheese
- low-fat sourcream
Directions

Combine hominy, black beans and 1/2 C salsa in crockpot.

Top with chicken. Pour remaining salsa over chicken.

Cover; cook on high 3-4 hours or low 6-7 hours.

Serve over rice. Top with cheese and sour cream.

If there are any leftovers, it makes great burritos.
