Quick Chicken and Dumplings

Ingredients

  • 6 individual frozen biscuits
  • 1/4 cup chopped onion
  • 1/4 cup chopped green peppers
  • 1 tbsp olive oil
  • 4 cups shredded rotisserie chicken
  • 2 14 1/2 oz cans chicken broth
  • 1 4 oz can mushrooms with stems, drained
  • 1 tsp chicken boullion
  • 1 tsp minced parsley
  • 1 tsp dried sage
  • 1/4 tsp dried rosemary
  • 1/4 tsp pepper

Directions

  1. Cut each biscuitinto fourths, set aside.

  2. In a large sauce pan, saute onions and peppers in olive oil until tender. Stir in chicken, chicken broth, mushrooms, chicken boullion, parsley, sage, rosemary and pepper. Bring to a boil. Reduce heat. Add bisbuit pieces for dumplings. Cover and simmer for 10 minutes or until toothpick in center of biscuit comes out clean.
