Fish, Tomato and Spinach Casserole

Ingredients
- 1 package (284 grams) fresh spinach, washed with coarse stems removed
- 1 can tomato sauce
- 400-700 grams cod or sole
- 2 cups grated mozzarella or white cheddar
Directions

Preheat oven to 350 F.

In a saucepan over medium-high heat, cook wet spinach leaves for 5-8 minutes, until just limp.

Drain, squeeze out remaining moisture and chop coarsely.

Pour half the sauce into a casserole dish, add a layer of half of the fish, half the spinach, half the cheese, then repeat.

Bake for 45 minutes or until bubbling.
