Salmon Vegetable Casserole

Ingredients
- 1 213-g can salmon, drained and skin removed
- 2 eggs, beaten
- 1 small zucchini, thinly sliced
- 1 cup shredded mozzarella
- 1/2 cup frozen green peas, thawed
- 2 tbsp plain yogurt
- 2 tbsp mayo
- 2 tsp finely chopped onion
- 1/4 tsp dried dill
- Pinch of black pepper

Preheat oven to 350 F.

In a large bowl, mash salmon well.

Add all remaining ingredients and stir to combine.

Spoon mixture into a greased 1-litre casserole dish.

Bake for 35 minutes or until set in the centre.
