Salmon Vegetable Casserole

Ingredients

  • 1 213-g can salmon, drained and skin removed
  • 2 eggs, beaten
  • 1 small zucchini, thinly sliced
  • 1 cup shredded mozzarella
  • 1/2 cup frozen green peas, thawed
  • 2 tbsp plain yogurt
  • 2 tbsp mayo
  • 2 tsp finely chopped onion
  • 1/4 tsp dried dill
  • Pinch of black pepper

Directions

  1. Preheat oven to 350 F.

  2. In a large bowl, mash salmon well.

  3. Add all remaining ingredients and stir to combine.

  4. Spoon mixture into a greased 1-litre casserole dish.

  5. Bake for 35 minutes or until set in the centre.
