Zippy Baked Carrots

Ingredients
- 2 pounds Carrots, sliced 1/4 " thick
- 6 slices Swiss Cheese
- 1 onion. small and minced
- 4 tablespoons Butter
- 3 tablespoons Flour
- 1 teaspoon Chili Powder
- 2 cups Milk
- 1 cup Bread Crumbs, fresh and soft
- 7 slices Bacon, cumbled
- 2 tablespoons Butter, melted
Directions

Boil carrots in small amount of water until crisp/tender, about 5 minutes.

Layer 1/2 the carrots in a 2 qt. casserole.

Next, layer 1/2 the cheese.

Repeat layers.

Saute onions and4 T. butter, about 2 mins.

Blend in flour and seasonings.

Cook, stirring for 1 minute.

Add milk all at once and cook until thickened.

Pour sauce over carrots-cheese layers.

Mix bread cumbs and 2 T. melted butter; sprinkle over all.

Top with bacon.

Bake at 350 degrees for 25 minutes
