Spaghetti Pie

Ingredients

  • 6 oz spaghetti, cooked and drained
  • cooking spray
  • 2 egg whites, well beaten
  • 1/2 cup parm. cheese, divided
  • 1/2 cup lite ricotta cheese
  • 1/2 cup nonfat cottage cheese
  • 1 cup spaghetti sauce
  • 1/2 cup lite mozzarella cheese

Directions

  1. Preheat oven to 350 degrees.

  2. Lightly spray 10 inch pie plate with parm. cheese.

  3. Combine eggs with 1/4 cup parm. cheese and stir into spaghetti.

  4. Pour spaghetti mixture into prepared pie plate.

  5. Form into a crust. Combine ricotta, mozzarella, and cottage cheese in a bowl. Spread mixture over bottom of spaghetti crust. Top with spaghetti sauce.

  6. Bake uncovered for 25 minutes. Sprinkle with reserved 1/4 cup parm. cheese. Cool 10 minutes before cutting into wedges.

  7. Variations add mushrooms or ground turkey, fresh tomatoes.
