Ingredients
- 1-2 lbs Italian sausage (1/2 sweet and 1/2 hot), cooked and drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cans beef broth
- 1/2 cup water
- 1/2 cup red wine
- 1 can chopped tomatoes
- 8 oz. tomato sauce
- 2 carrots, peeled and chopped
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 3 Tbsp. parsley
- 8 oz. cheese tortellini
- parmesan
Directions

Saute onion, garlic, and carrots. When tender transfer to soup pot with beef broth. Add in water, wine, tomatoes, basil, oregano, parsley and tomato sauce. Simmer about 30 min. Add tortellini and simmer until done. Top with fresh parmesan cheese
