Chicken Tetrazini

Ingredients

  • 1 1/2 lbs chicken breasts or tenders, cut into bite-sized pieces, cooked
  • 2 small onions, chopped
  • 1/4 tsp pepper
  • 3 1/2 cup chicken broth
  • 1/2 cup cooking sherry
  • 1 16 oz spaghetti, cooked
  • 1/2 cup butter
  • 1/2 pd mushrooms, sliced
  • 1 Tbs lemon juice
  • 1/2 cup flour
  • 1/4 tsp nutmeg
  • 1 tsp salt
  • 1/2 tsp paprika
  • 1 cup half & half
  • 1/2 cup Parmesan cheese

Directions

  1. Cook chicken in fry pan or in boiled water.

  2. Cook spaghetti as directed on package.

  3. Chop onions add to 4 qt pan over medium heat along with 2 Tb butter. Also add mushrooms and lemon juice. Cook for about 5 mins and remove to medium bowl.

  4. In small sauce pan, melt remaining 2 Tbs butter. When hot, stir in flour, salt, nutmeg, and paprika. Stir until smooth.

  5. Gradually stir in chicken broth and sherry. Stir until liquid is thickened.

  6. Add half & half, chicken chunks, mushroom mixture.

  7. Cook over low heat stirring until heated through.

  8. Place cooked spaghetti in greased 9×13 pan.

  9. Pour sauce and chicken mixture over the top of noodles.

  10. Sprinkle with Parmesan cheese.

  11. Cook for 30 mins uncovered in 350 degree oven.
