Ingredients
- 1 1/2 lbs chicken breasts or tenders, cut into bite-sized pieces, cooked
- 2 small onions, chopped
- 1/4 tsp pepper
- 3 1/2 cup chicken broth
- 1/2 cup cooking sherry
- 1 16 oz spaghetti, cooked
- 1/2 cup butter
- 1/2 pd mushrooms, sliced
- 1 Tbs lemon juice
- 1/2 cup flour
- 1/4 tsp nutmeg
- 1 tsp salt
- 1/2 tsp paprika
- 1 cup half & half
- 1/2 cup Parmesan cheese
Directions

Cook chicken in fry pan or in boiled water.

Cook spaghetti as directed on package.

Chop onions add to 4 qt pan over medium heat along with 2 Tb butter. Also add mushrooms and lemon juice. Cook for about 5 mins and remove to medium bowl.

In small sauce pan, melt remaining 2 Tbs butter. When hot, stir in flour, salt, nutmeg, and paprika. Stir until smooth.

Gradually stir in chicken broth and sherry. Stir until liquid is thickened.

Add half & half, chicken chunks, mushroom mixture.

Cook over low heat stirring until heated through.

Place cooked spaghetti in greased 9×13 pan.

Pour sauce and chicken mixture over the top of noodles.

Sprinkle with Parmesan cheese.

Cook for 30 mins uncovered in 350 degree oven.
