Ingredients
- 1 cup flour
- 3/4 cup sugar
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup grated peeled Granny Smith apple (about 1 medium)
- 1/2 cup grated carrot (about 1 medium)
- 1/2 cup shredded zucchini
- 1/4 cup chopped walnuts
- 1/2 cup vegetable oil
- 2 large eggs

Preheat the oven to 350°.

In a large bowl, combine the flour, sugar, cinnamon, baking soda, and salt.

Add the grated apple, grated carrot, shredded zucchini, and walnuts; toss well.

In a small bowl, combine the oil and eggs, stirring with a whisk.

Add the egg mixture to the flour mixture, stirring just until combined.

Spoon the batter into a 8 inch loaf pan coated with cooking spray and bake for 50 minutes.

Cool 10 minutes in the pan on a wire rack; then remove and cool completely before slicing.
