Beef Stew

Turns out great using carne instead of stew meat – especially if going for the gross factor at Halloween time.
I usually double all ingredients except for the broth and tomatoes, I will triple those and then it serves 12-16 people easily.

Ingredients
- 2 Tbsp Canola
- 1/4 Cup Flour
- 1/2 tsp each of Salt and Pepper
- 1/4 tsp Garlic Powder
- 1 lb Stew Beef, cut in 1" chunks
- 2 Cans Stewed Tomatoes (14 1/2 oz can)
- 1 Can Beef Broth (10 1/2 oz can)
- 1 tsp Thyme
- 1 Bay Leaf
- 1 Bag Frozen Mixed Vegetables of your choice
- 3/4 Cup Orzo Pasta (if desired)
Directions

Measure flour, salt, pepper, and garlic into ziploc bag.

Drop stew beef into bag and shake until well coated.

Place stew beef into heated oil in a stew pot.

Cook meat on medium, turning every 3-4 minutes, until browned well on all sides.

Add the tomatoes, broth, thyme, and bay leaf.

Bring to a boil, then cook on low, covered.

After an hour, add the vegetables of choice. If adding raw veggies, cook an additional 45 minutes. If adding just frozen veggies, give it a good 10 minutes to heat through.

If making this dish to serve at Halloween, for the ew factor, then prepare the orzo.

Cook the orzo in a saucepan according to package directions.

When just tender, drain it through a colander into the sink, shaking out any excess water.

These are your “maggots”.

You may place them carefully on top of the stew either in the pot, or in individual serving bowls.
