Beans or Chickpeas

1 cup dried beans makes 2 cups cooked. Store cooked beans in the fridge for up to 4 days or in the freezer for up to 6 months.

Ingredients

  • 1 cup dried beans or chickpeas

Directions

  1. In a saucepan, combine beans and water.

  2. Cover and bring to a boil; boil for 3 minutes.

  3. Turn off heat and soak for 1 hour.

  4. Drain and rinse thoroughly under cold water; beans are now ready to cook.

  5. To cook, combine one cup soaked beans and 3 cups fresh cold water.

  6. Bring to a boil over medium-high heat.

  7. Reduce heat to low and simmer until beans are tneder, 45 minutes to 1 hour.
