Shrimp Puffs

Ingredients

  • 1 7 1/2 oz can refrigerated biscuits
  • 1 cup shredded monterey jack cheese
  • 1 scallion, white part and some green, chopped
  • 1/2 cup mayo
  • 1/2 lb baby shrimp, cooked and peeled
  • 1/2 tsp chopped fresh dill

Directions

  1. Preheat oven to 350 degrees. Coat pan with cooking spray.

  2. Split each biscuit in 1/2 and place 1/2 in muffin pan pressing into bottom and sides.

  3. In medium bowl, mix cheese, mayo, shrimp, scallion and dill. Put 1 tbsp of mix in each biscuit. Bake for 20 mins or until puffs are golden and bubbling.
