Shepherd’s salad

Ingredients
- 4 large tomatoes, deseeded and chopped
- 1 large cucumber, deseeded and chopped
- 1 large red onion, thinly sliced into rings
- large bunch fresh flatleaf parsley, leaves picked and roughly chopped
- 1 mild green chilli, deseeded and finely chopped
- 4 tbsp extra-virgin olive oil
- juice of 1/2 lemon
Directions

Put the tomatoes, cucumber, red onion, parsley and chilli into a large serving bowl. Drizzle with the olive oil and lemon juice. Season to taste. Toss until evenly coated and serve at once.
